Preoccupied Learning How to Can

I’ve been canning….  this summer I’m learning how to can vegetables with a pressure canner.  I think I have learned more chemistry in the past month…my brain hurts and my kitchen is a wreck and my love and adoration for our great grandmother’s just keeps growing.  My husband told me the other day that he is pretty sure I am addicted to canning.   

Canning has opened up a whole new world for me.  I’m still trying to overcome the little fear of killing everyone with botulism.  I hear that is a normal starting out fear.  My nose has been in a variety of canning books.  I’ve been talking to the children about it.  They are very excited about it as well.  Except the other morning I heard the 8 year old tell the 6 year old…”No…DON’T EAT THAT!  I think it has Mono-nucular Botchulist in it!”  It was an opened can of jelly we opened the day before that they got out of the refrigerator…but thought twice about eating. 

It is incredibly exciting to turn my $1’s worth of green bean seeds into jars of home canned green beans. 

I just need to acquire more boxes and baskets of food to can–our garden isn’t near big enough.

    Hi, Beth. I have learned how to pressure can this year also. I have only done several quarts of green beans so far, but I’m inspired to do more things. Our garden has not done well this year, so I hope to have more vegetables to can next year. I have also canned tomatoes for the first time. This feels like a big accomplishment in our desire for both healthy eating and self-sufficiency. I could so relate to your grocery store experience. I’ll have to watch King Corn. Though, I’ll have to admit, I’m a little bit afraid to. After reading and thinking on these truths about the reality of the food we buy in grocery stores, it does overwhelm me sometimes. I have the book Nourishing Traditions by Sally Fallon and try to incorporate some of her ideas into my food preparation, but as you know, it is time consuming. I’m amazed at what you are able to accomplish. Do you spend a whole lot of your time in the kitchen? With your children, garden, canning/preserving, animals, regular meal prep, etc., I’m sure you have very little time to spare, but I always appreciate your willingness to blog about your experiences. I have learned alot from you over the past two or three years.

    a whole lotta time in the kitchen is a big understatement…. I live in my tiny kitchen— yes…from making cow bottles, to straining milk, cleaning and preparing garden produce, preparing meals..washing dishes…sweeping the floor a zillion times a day….. You’s always a mess and always busy…always something going on.
    My canning is just getting started…I am not near where I want to be with food preserving. I am building my jar supply currently and trying to acquire more food to can.

    as for nourishing traditions…. I too have learned a lot from Nourishing Traditions and Sally Fallon….I do not agree with everything, but think there is lots to learn there.
    As to what I am able to accomplish… ohh I feel like I get nothing done most days… 😉
