Vaughnshire Pancake Recipe

I am re-posting this recipe for those who have not seen it. 
This is a pancake recipe that we sorta made up from a combination of recipes. The idea was to create a simple pancake recipe that the kids could remember and whip up if I needed them to.
A Large Family Amount of Pancakes
4 cups of flour (I use ground wheat flour–we like the prairie gold)
4 teaspoons of baking powder
1 teaspoon of salt
4 cups of milk
4 eggs
1 teaspoon of vanilla
1 stick of melted butter (you can use a 1/2 cup of oil instead)
1/2 cup of honey (you can use sugar, but not as much as you would honey.)
Mix up in a large mixing bowl with a whisk.  You should combine the dry ingredients first and stir together or else you might get baking powder clumps.  I then add all the wet ingredients and whisk together.

An Even Larger Batch — This is the batch size we currently make. 
8 cups of flour
8 teaspoons of baking powder
1 teaspoon of salt.  You can add two if you prefer. 
8 cups of milk
8 eggs
2 teaspoons of vanilla
1 cup of oil or 2 sticks of melted butter.  (we usually use olive oil)
1 cup of honey (although I leave this out a lot or decrease the amount.)
We like to top with spiced apples.  We make them by slicing or chopping apples in a skillet and sauteing them with butter and cinnamon.  We also sometimes top our pancakes with peaches, blueberries or strawberries.  Applesauce is another great topper.  And then of course there is nothing like real maple syrup!
